You can\\\'t go wrong with these scrumptious and gorgeously vibrant Red Velvet Cupcakes. Moist, fluffy cupcakes with a hint of chocolate, topped with the creamiest, vanilla-infused Cream Cheese Frosting. These will be a hit at any party or potluck!

½ C unsalted butter, softened
¾ C white (granulated) sugar
1 large egg
2½ TBS unsweetened cocoa powder
1 small bottle (2 TBS) red food colouring
½ tsp vanilla extract
½ C buttermilk
