A deep chocolate cake with undertones of cinnamon and wine served with sweetened mascarpone whipped cream.

For Cake:
4 ounces bittersweet chocolate
1 3/4 cups brown sugar
10 tablespoons unsalted butter, at room temperature
3 large eggs, slightly beaten
2 1/4 cups all-purpose flour
1 cup unsweetened cocoa powder
1/2 teaspoon ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup red wine
1/3 cup whole milk
1/2 teaspoon vanilla extract
For Whipped Cream
1 cup mascarpone cheese
1 cup chilled heavy cream
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
