Rhubarb Oatmeal Bars

1/2 cup nuts (optional)
1 1/2 c. oatmeal
CRUST
1 c brown sugar
1/2 tsp salt
1 1/2 c. flour
1 c. shortening or 1/2 cup butter
1/4 tsp baking soda

FILLING
3 c. rhubarb
1 c. water
1 1/2 c. sugar
2-3 Tbsp cornstarch
1/4 c. water
1 tsp vanilla
Red food coloring (optional)
Mix first 7 ingredients until crumbly. Spread half the crust mix in a 13x9 in baking dish. Pour 1 cup water over rhubarb, drain after 5 minutes. Boil sugar, cornstarch and 1/4 c. water. Add vanilla and rhubarb and cook until clear. Pour rhubarb mixture over crumb crust and cover with the remainder of the crumb mixture. Bake at 350 degrees about 30-35 minutes.
