Rhubarb Strawberry Pie

My dad came to visit so we took him to our local farmer's market. As we were shopping around, we found strawberries and rhubarb. He commented that he liked rhubarb-strawberry pie so we bought some of each, went home, and made pie! It was delicious and super easy to make!

2 1/2 c. rhubarb, chopped into chunks
2 1/2 c. strawberries, tops removed and halved
1 1/2 c. sugar
2 Tbsp. tapioca pearls
1 Tbsp. flour
1/2 tsp. lemon juice
1/2 tsp. cinnamon
1 tsp. vanilla
1 store bought deep dish pie crust, can be either the kind in a pie plate or the kind you put in your own pie plate

2 Tbsp. tapioca pearls
1 Tbsp. flour
1/2 tsp. lemon juice
1/2 tsp. cinnamon
1 tsp. vanilla
1 store bought deep dish pie crust, can be either the kind in a pie plate or the kind you put in your own pie plate
Heat oven to 425 degrees. Get pie crust ready. Add remaining ingredients to a large bowl and stir until mixed. Dump into crust. You can dot the top with up to 3 Tbsp. butter if you like, but I didn't do this. You can also add a top crust, either whole with slits cut into it or a lattice, but I didn't do this either.
Bake pie at 425 for 15 minutes, then decrease temperature to 375 degrees and bake an additional 45 minutes. Pie is done when it is bubbly. Delicious warm or cold!
