Roasted Beet Salad with Feta & Pine Nuts

A fantastic side dish! This is a different take on your basic salad. It looks beautiful and the flavours are great! It is perfect for Valentine\\\'s Day dinner.

2 lbs. raw beets
1/4 cup extra-virgin olive oil
1/4 cup red wine vinegar
1 heaping tablespoon dijon mustard
1 fat clove garlic, minced
3/4 teaspoon salt, or to taste
freshly-ground black pepper to taste
3 oz feta, crumbled
1/2 cup pine nuts, toasted
2 tablespoons chives, chopped
