ROASTED BROCCOLI CASSEROLE

This roasted broccoli casserole is a staple at our Thanksgiving and Christmas table. Make your own family tradition by whipping up a batch of this delicious side dish.

5-6 cups fresh broccoli florets
2 tablespoons olive oil
1/2 cup salted butter
1/4 cup diced onion
1/3 cup flour
3 cups whole milk
1/2 teaspoon dry mustard
1/4 teaspoon garlic powder
1/2 teaspoon salt or more to taste
3-4 cups shredded cheddar jack cheese
10-15 Ritz crackers crushed
3 tablespoons butter melted
