2 medium eggplants
2 garlic cloves
2 tsp ground cumin
2 tsp ground coriander
1 tsp allspice
1 tsp lemon zest
4 tbsp olive oil
3/4 cup couscous
1/4 cup raisins
3/4 cup boiling water
1/4 cup chopped green olives
1/4 cup chopped walnuts
1/4 cup scallions
2 tbsp lemon juice
2 tbsp extra-virgin olive oil
