This roasted eggplant is a healthy vegetarian recipe — which is perfectly roasted and piled high with an easy couscous recipe. Easy to prepare and divine tasting. This is satisfying enough to be a tasty appetizer on its own with just a very simple vegetable salad. A Middle Eastern approach to an eggplant-couscous recipe. Now, because this is a delicious recipe and because it is so amazing, it requires quite a few steps. But, once you get the hang of it, you’ll be able to make this recipe in no time. 2 medium eggplants
2 garlic cloves
2 tsp ground cumin
2 tsp ground coriander
1 tsp allspice
1 tsp lemon zest
4 tbsp olive oil

Grilling vegetables is not about having special equipment. The best vegetables to grill are the ones that are ripe in your garden or fresh at the market.

2 bell peppers ( remove core and seeds, quarter )
1 large red onion ( peel and quarter )
1 medium eggplant ( cut lengthwise in half-inch slices or rounds )
1 medium zucchini ( cut lengthwise in half-inch slices or rounds )
1/2 lb asparagus ( cut off woody ends )
2 medium tomatoes ( cut in half, or a bunch of grape tomatoes, leave whole )
2 large portobello mushrooms ( I like them whole )
1/2 c olive oil ( or more )
Juice from a half lemon or lime
Generous pinch of sea salt and freshly cracked pepper

Meaty Mushroom-Stuffed Eggplant

A middle-eastern approach to eggplant and mushrooms. A recipe loaded with umami flavors that will fill you up. You can add some spices such as clove or rosemary to add an additional boost to the dish. You can also substitute beef with ground lamb for a tastier result. Or, roast the eggplant in the oven for 20 minutes before adding the meat filling and then roast it again for another 5 minutes to create a great texture without the smoky flavor.

4 pieces (2 lbs) large Eggplant
Salt and pepper to taste
2 tbsp Extra virgin Olive Oil
15 ounces oyster mushroom
8 ounces ground beef
4 cloves garlic
2 tsp cumin
(1 tbsp) hoisin sauce

Serve this dish as an appetizer. It would be lovely before serving this Pot Roast.
