Roasted Potato and Green Bean Salad

Take advantage of summer's fresh, seasonal produce and put together this flavorful salad, which is sure to please everyone at your next potluck, picnic, or Sunday evening supper!

•4 red potatoes, unpeeled and chopped into 1-inch cubes
•¼ lb. green beans, trimmed and cut in half
•1 large red onion, chopped into 1-inch pieces
•8 slices cooked, chopped bacon
•2 tablespoons olive oil

For the Vinaigrette:
•¼ c. olive oil
•2 T. cider vinegar
•½ t. salt
•¼ t. pepper
•1 T. fresh-squeezed lemon juice
•1 T. Dijon mustard
•1 T. fresh thyme or 1 t. dried thyme
