Mother's Day is just around the corner and if you are looking for a delicious omelet to serve Mom for breakfast or brunch, this is it. This salmon recipe is packed full flavor and protein too. Add the onion and chive cream cheese, and this simple omelet is sure to make mom happy. Pair it with bacon or maybe a bowl of fruit and she will have a Mother's Day brunch fit for a queen!

3 eggs, beaten
1- 6 oz salmon fillet
1 large clove garlic, chopped
1/2 Tablespoon olive oil
1 Tablespoon butter
1/2 cup of chive and onion cream cheese, softened
1/4 cup of shredded Monterrey jack cheese
