Salmon Salad with Lemon Avocado Dressing

I decided to throw together a few of my favorite foods and have now found my new favorite healthy lunch. Topped with this delicious and super easy Lemon Avocado Dressing, this salad is sure to give you all the energy you’ll need to get through the rest of the day!

3 ounces cooked salmon
2½ cups of Romaine Lettuce
6 cherry tomatoes
Croutons
Top with Parmesan Cheese
Dressing:
1 Avocado
? cup Extra Virgin Olive Oil
1 Tablespoon Lemon Juice (freshly squeezed tastes best)
1-2 Tablespoons water to get desired consistency

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
