Salted Caramel Apple Bars - shortbread crust + apple slices + homemade salted caramel + streusel crumbly topping!

Shortbread Crust:
½ cup unsalted butter, softened
¼ cup brown sugar, packed
1 cup all purpose flour
1 teaspoon vanilla
¼ teaspoon salt
Apples:
2-3 large honey crisp apples, thinly sliced
Salted Caramel Filling:
½ cup brown sugar, packed
¼ cup unsalted butter, cubed
¼ cup half-and-half (or heavy cream)
½ teaspoon vanilla
½ teaspoon salt - optional, but highly recommended
Streusel Topping: (you can halve if you want, but I like a lot of topping)
1 cup brown sugar, packed
½ cup all purpose flour
½ cup rolled oats
2 teaspoons cinnamon
½ cup unsalted butter, cold and cubed
