Gnocchi has quickly become one of our favorite things to cook with. Purchase fresh-made gnocchi in the refrigerated section of your grocery store to throw together this quick, healthy dish!

1 tablespoon olive oil
1 onion
2 cloves garlic ( minced )
1 pound turkey sausage ( pre-cooked smoked, sliced like a coin )
1 zucchini ( diced )
1/4 cup water
1 can (14 1/2 oz) Italian diced tomatoes ( undrained )
1 tablespoon dried oregano
1 tablespoon dried parsley
1/2 teaspoon garlic powder
to taste salt and pepper
1 can (15 ounces) Canneliini beans ( rinsed and drained )
1 package (16 oz) gnocchi ( uncooked )
1 1/2 cups fresh spinach
1/2 cup freshly grated mozzarella cheese
1/4 cup freshly grated Parmesan cheese
Fresh parsley ( for garnish )
  1. Preheat oven to 425 degrees.
