Sausage, Apple & Sweet Poato Hash

A combination of savoury and sweet, Sausage, Apple & Sweet Potato Hash is fresh, flavourful, easy to make, uses up leftover sausage and is great at any time of the day! Can all be made in one skillet for breakfast, lunch or dinner.

1 sweet potato, peeled and cubed
1 tbsp. butter & oil
½ tsp. salt & pepper
1 Gala apple, chopped
1 medium onion, chopped
¾ cup sliced mushrooms
2 cooked Italian sausages, sliced into 1 inch rounds
½ tsp. sage
¼ tsp. thyme
3 or 4 eggs
chopped fresh parsley (optional)

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
