Sausage, White Bean and Orzo Soup with Parmesan Kale Chip 'Dippers'

A hearty and comforting soup packed with sausage, white beans and orzo, and served with crispy parmesan kale chip 'dippers'.

300g spicy Italian sausage (roughly 3 large sausages), casings removed and cut into 1-inch peices
1 onion, peeled and diced
2 garlic cloves, minced
1/4 cup white wine
2 carrots, peeled and cut into small pieces
2 stalks celery, cut into small peices
5-6 cups chicken stock (depending on how thick you want the soup to be)
1 bay leaf
1/2 cup uncooked orzo
1 can white beans (cannellini or white kidney)
salt (to taste)
Parmesan Kale Chip Dippers
1 small bunch of kale (mine was 175g), stem removed and torn into bite-sized pieces
spray oil (to thinly coat Kale)
1-2 tbsp freshly ground Parmesan cheese
salt and pepper to taste
To serve:
Additional Parmesan cheese
Chopped parsley, to garnish
