6 large cucumbers
4 tsp kosher salt
2/3 cup thinly sliced green onions, white & green parts
1/2 cup plus 2 TBSP rice vinegar
2 TBSP honey
1 tsp sesame oil
Toasted sesame seeds
Feta cheese crumbles

Peel cucumbers. Cut into thin strips (use the julienne blade of a mandoline if you have one). Toss together cucumbers and salt, and drain in a colander for 30 minutes.
Toss together green onions, next 3 ingredients and drained cucumbers. Sprinkle with sesame seeds and feta cheese.
