Scrumptious Oatmeal Cake

This is a super rich, very moist cake! My husband does not like Oatmeal but he would not stop eating this cake! You can serve it without the frosting and it is still a special treat, just add a dollop of whipped cream.

2 cups quick cooking oats, not instant
1 & 1/2 cups VERY hot water
1 stick butter
1 cup brown sugar
1 cup white granulated sugar
2 eggs
1 tsp vanilla
1 & 1/2 cups white flour
1 tsp baking soda
1/2 tsp salt

Frosting:
1 &1/2 sticks butter
1 &1/2 cups granulated sugar
1 cup evaporated milk
Pour hot water over oats in large microwaveable plastic bowl. Let stand approx. 5 minutes. Stir in 1 stick of butter. Mixture should be warm enough for butter to melt completely, if not microwave for 0-15 seconds for butter to melt completely. With wooden spoon, mix in brown sugar, white sugar, eggs and vanilla. In separate bowl combine flour, soda and salt. Add half of flour mixture at a time and mix by hand till well blended. Pour into a greased 9 x 13 pan. Bake in a preheated 350* oven for 30 minutes. DO NOT OVERBAKE. Let cake cool till warm and cut into squares, cleaning knife often. While cake is cooling, make frosting. Melt butter in medium saucepan, add evaporated milk and granulated sugar, Bring to a boil slowly, stirring constantly. Once you bring to a SLOW Boil, cook without stirring for 5 minutes. Remove from heat, let cool slightly and pour over warm cake, do not scrape bottom of sauce pan! Enjoy this is absolutely delicious!
