This is a flavorful and delicious side dish using shredded fresh zucchini and seasoned with Turmeric.

1 cup water
1 teaspoon salt
1/2 cup dried couscous
2 tablespoons extra virgin olive oil
1 clove garlic (chopped)
1 green onion (chopped)
2 Small zucchini (grated)
2 teaspoons Jiva Organic Turmeric Powder
2 tablespoons grated parmesan cheese
1 cup fat free plain yogurt (divided)
1/3 cup chopped fresh mint
3 tablespoons all purpose flour
