Shrimp Summer Salad w/Peach Mango Dressing

I also love to cook as you all know but on some of those hot days, the oven needs a vacation so with a plethora of fresh fruits and veggies, a mango salad was in order.

Pineapple Shrimp Ingredients
1 lb large pineapple
1 cup canned crushed pineapple
2 cloves garlic, chopped
Crushed red pepper to taste
Salad Fixins:
1/2 mango, cut to bite sized pieces
1 roma tomato, cut into bite sized pieces
1 Kiwi, sliced
1/2 red pepper, cut to bite sized pieces
1/2 avocado, sliced
2 cups mixed greens
your favorite goat cheese
Dressing:
1/2 mango (peeled and chopped)
1 whole peach
2-3 Tablespoons coconut oil
2 Tablespoons honey
1 lb large pineapple
