Simple and Delicious Crepe recipe

A basic crepe recipe that is sweet-like and pairs well with fruit with whipped cream or any other desired spreads :)

2 eggs, room temperature is suggested
1 cup milk, room temperature is suggested too
1/3 cup water, room temperature is suggested again
1-2 teaspoons vanilla extract
2 tablespoons granulated sugar
2 tablespoons unsalted butter(if using salted,omit the 1/4 teaspoon salt)
1 cup all-purpose flour
1/4 teaspoon salt
strawberries, cut lengthwise
grapes,cut into slices
banana, cut into thin slices
1 whipped cream recipe, or any other fillng including jams/spreads
In a food processor, place all the liquid ingredients and pulse 2 times to just combine them. Add in the dry ingredients; pulse for 3-5 times until combined. Let the batter rest for at least 1 hour or up to 8 hours, in the fridge. Lightly grease a 9 inch pan with butter or cooking spray. Measure about 1/3 cup batter into pan. Tilt pan to spread batter all over the pan. Once crepe has lots of little bubbles, loosen any edges with a spatula.Flip crepe over and cook until the same color as the cooked side.. Slide crepe from pan to a plate. Fill crepe with desired filling; roll into a cilinder(or taco hehe) Decorate as desired !!
