Simple Blueberry Muffins

These Muffins are so simple-get your kids in the kitchen and let them help!

1 1/2 cups flour
1/2 cup sugar
2 tsp. baking powder
1 cup buttermilk
1/3 cup vegetable oil
2 eggs
1 cup fresh or frozen blueberries
brown sugar for sprinkling on top (optional)
Preheat oven to 425. Line 12 muffin tins with paper liners or spray with nonstick spray. In a large bowl, combine the flour, sugar and baking powder. In a small bowl, whisk together the buttermilk, oil and eggs. Pour the wet ingredients over the dry mixture and add the blueberries. Stir until combined. Fill each cup 3/4 full. Sprinkle the top of each with a little brown sugar. Bake 15-18 minutes, or until muffins are golden and springy to the touch.
