Simply Delish Pancakes

These work every time and are fluffy and delicious. I have adjusted the original recipe to make a decent sized batch (big family) and added some vanilla. The kids gobble them up!

3 cups all-purpose flour
3 tbsp white sugar
3 tsp baking powder
1 1/2 tsp baking soda
3/4 tsp salt

1 1/2 tsp vanilla
3 cups milk
3 eggs
6 tbsp vegetable oil
lightly oil and preheat two frying pans (or a griddle if you have one) preheat your oven to 200 degrees to keep pancakes warm as you cook them. In large bowl, combine flour, sugar, baking soda and powder and salt. Make a well in the center. In a separate bowl, beat together eggs, milk and oil. Pour wet into dry, stirring until smooth. Refrigerate for 30 mins at this point. (Not essential, but makes for fluffier pancakes!) Scoop batter in 1/4 cup amounts onto hot pans/griddle. Brown on each side, turning when bubbles form. Serve hot with syrup!
