2 3/4 cups chicken broth
2 chicken breasts
salt and pepper, to taste
1 Tbsp olive oil
1-2 bell peppers, chopped (any color, or use mini sweet peppers in a variety of colors)
3 green onions, chopped, divided
For the sauce:
2 Tbsp hoisin sauce
2 Tbsp white wine vinegar
2 Tbsp cornstarch
2-3 tsp sriracha hot sauce, to taste
1 tsp minced garlic
3/4 cup chicken broth
For the Honey Roasted Cashews:
1 cup cashews
2 Tbsp honey
2 tsp sea salt
crushed red pepper flakes, to taste
