3/4 lb boneless, skinless chicken thighs or breasts (or half and half)
1 cup celery, finely diced
2 Tbsp dried onion
1 carrot, finely diced
1 Tbsp tomato paste
1 garlic clove, minced
3 1/2 cups chicken broth (or 3 cups water and 3 1/2 tsp chicken bouillon granules)
1 (14 oz) can diced tomatoes
1/2 tsp salt
1 tsp dried basil
1 bay leaf
1/4 tsp black pepper
1 cup orzo
