Rich homemade chicken broth with just 6 ingredients.

3 pounds chicken thighs or chicken wings, bone in and skin on
1 medium onion, coarsely chopped
1 ounce fresh ginger, sliced
1 teaspoon sea salt
2 bay leaves
3 quarts water
