Slow Cooker Turkey Minestrone

Make sure to get all the turkey goodness from your carcass. Simmer it and make this tasty, vegetable filled soup.

4 cups turkey, cut into bite-sized pieces
28 ounces frozen vegetables (broccoli, carrots, cauliflower)
14 ounces frozen green beans
1 1/2 cups frozen peas
4 cups turkey broth, low fat
salt and pepper to taste
8 ounces egg noodles, cooked
Combine first 6 ingredients (turkey through salt and pepper) in the liner of a slow cooker coated with cooking spray. Cook on low 8 to 10 hours. Add noodles the last 30 minutes of cooking, stirring to combine.
