Smashed Roasted Potatoes

Smashed roasted potatoes are one of those things you only make on occasion because they really aren’t that good for you (even if you top with loads of broccoli). Anything that you’ve ever imagined could go on a baked potato can go on these, from crumbled bacon to a nice curry. Alone with the right toppings a meal can be made of it, or they can be made as a great side to a meal, or maybe a game-day food spread. 8 small potatoes washed and cut in half
1/4-1/2 c olive oil
1 c grated extra sharp cheddar cheese
2 spring onions, chopped
1/2 c sour cream
salt and pepper to taste

Parboil the potato halves for about 20-25 minutes, until just soft.
Preheat oven to 450?
Drain the potatoes and place on a foil-covered baking sheet, about an inch apart.
