Smashed roasted potatoes are one of those things you only make on occasion because they really aren’t that good for you (even if you top with loads of broccoli). Anything that you’ve ever imagined could go on a baked potato can go on these, from crumbled bacon to a nice curry. 8 small potatoes washed and cut in half
1/4-1/2 c olive oil
1 c grated extra sharp cheddar cheese
2 spring onions, chopped
