Smoked Salmon and Avocado Rice Bowl
Fluffy Japanese style rice topped with smoked salmon, lightly pickled cucumber and fresh avocado then drizzled with sesame oil and a sprinkling of chili flakes. Super quick and totally delicious, add a dollop of cream cheese to make it a bit more indulgent!
3 cups Short grain Japanese white rice ( cooked )
120 grams Smoked salmon
2 tbsp Sushi vinegar
1/2 tsp Sugar
2 tbsp Cream cheese
1/2 tsp Chili flakes ( or toasted sesame seeds )
1 dash Sesame oil
- Using a peeler, make ribbons of cucumber and put them in a bowl with 2 tbsp of sushi vinegar and ½ tsp sugar. Mix and set aside in the fridge while prepping the other ingredients.
