Soft Boiled Egg Open Face Veggie Sandwich

This recipe rocks because you can use whatever you have in the fridge. I had a little bit of slaw left, so I threw it in. Use whatever you like, asparagus would be great too!

2 teaspoons olive oil
1/2 red onion, sliced
15 green beans, ends cut off
1 red pepper, diced
¼ bag broccoli slaw
1 cup mushrooms, sliced
¼ cup broccoli, cut into small florets
3 green onions, sliced
10 grape tomatoes, quartered
2 tablespoons parsley, chopped
7 eggs
7 pieces of bread
2 tablespoons fresh basil, sliced
