These healthy cookies are soft and chewy, and packed with beautiful flavors from spices!

•½ cup (1 stick) unsalted butter, at room temperature
• ½ cup dark brown sugar
• ½ cup unsulfured molasses
• 1 large egg
• 1 cup all purpose flour
• 1 cup whole wheat flour (preferably whole wheat pastry flour)
• 1 ½ teaspoons baking soda
• ¼ teaspoon salt
• 1 teaspoon ground ginger
• 1 teaspoon ground cinnamon
• 1/8 teaspoon ground cardamom
