Spiced Apple and Butternut Squash Soup

All of the flavors of Autumn come together in a comforting soup for those blustery days.

1/4 cup unsalted butter
2 large onions, diced
2 large green apples, cored and peeled
1 tsp ground nutmeg
1 tsp ground allspice
1 tsp ground cinnamon
1 tsp grated ginger root
2 butternut squash, peeled, seeded, and diced
3 qt chicken stock
salt and pepper to taste
In a large pot, melt butter over medium heat. Add diced onions and apples, cook until tender (about 10 minutes) Stir in spices, cook for 1 minute Add squash and chicken stock, bring to a boil Reduce heat to low, simmer 20 to 30 minutes until squash is tender Puree and serve.
