Spiced French Apple Pie

Richly spiced apple pie with a hint of vanilla!
Crust:
3 Cups all purpose flour (sifted)
1 1/2 teaspoons salt
4 Tablespoons sugar
1/2 cup shortening (chilled)
1/2 cup butter (chilled)
1 egg
1 teaspoon white vinegar
5 Tablespoons cold water
1 Tablespoon vanilla
Filling:
2 Granny smith apples
2 Pink Lady Apples
2 Golden Delicious Apples
2 Fuji Apples
3/4 Cup sugar
3 Tablespoons flour
2 Tablespoons cinnamon
1 Teaspoon nutmeg
1 Teaspoon allspice
1 Teaspoon ginger
1/2 Teaspoon cardamom
1 Tablespoon vanilla
6 Tablespoons butter
2 Tablespoons milk

Filling:

2 Golden Delicious Apples
2 Fuji Apples
3/4 Cup sugar
3 Tablespoons flour
2 Tablespoons cinnamon
1 Teaspoon nutmeg
1 Teaspoon allspice
1 Teaspoon ginger
1/2 Teaspoon cardamom
1 Tablespoon vanilla
6 Tablespoons butter
2 Tablespoons milk
Crust:
1. Preheat the oven to 425 degrees Fahrenheit. Combine flour, salt and sugar in bowl.
2. Using a fork or pastry cutter, cut cold butter and shortening into the flour mixture until it resembles a coarse meal.
3. In a separate bowl, whisk together egg, vinegar, water and vanilla. Add gradually to flour mixture using fork. Toss into dough until it forms a ball.
4. Shape dough into 2 balls and wrap in plastic wrap. Flatten to form a thick disk and refrigerate for 20 minutes.
5. While the dough is chilling, core and thinly slice the apples.
6. Add vanilla to apples in a large bowl.
7. Mix together sugar, spices, and flour in a small bowl. Stir into apples and set aside, saving about 3 tablespoons of the spice-sugar mixture.
8. Roll the chilled balls of dough out with rolling pin and place one in the bottom of a pie pan.
9. Spoon apples evenly into prepared crust.
10. Cut butter pieces and spread around top of apples.
11. Place second pie crust on top of the apples and seal by pinching the edges of both crusts together. Cut slits in the top crust to ventilate during baking. You could also shape your top pie crust to form a weave or other design.
12. Brush crust with milk and sprinkle the remaining spice-sugar mixture on top.
13. Place pie on middle rack of oven.
14. Bake for 15 minutes at 425 degrees. Then lower the oven to 350 degrees and bake until “done”. This means you should be able to insert a knife into the center of the pie without hearing/feeling any of the apples crunch. Also, the crust will be light brown and crunchy. It will about 45 minutes to an hour.
