Spicy Parsnip Soup

There was this spicy parsnip soup in a can that my husband and I loved when we lived in England and we can not find it here at all. I have perused so many British food online shops too and have had no luck. I finally decided I would have to find a recipe and adapt it to our tastes. This is what I came up with. It has a bit of heat, but the cayenne pepper can be adjusted depending on what you prefer! We had four rather large servings from this recipe.

2 tbsp olive oil
2 tsp coriander seeds
2 tsp cumin seeds, a bit extra to garnish
1 tsp ground turmeric
1 tsp mustard seeds
1 tsp cayenne pepper
1 large onion, chopped into large chunks
3 garlic cloves
2 lbs diced parsnips
2 plum tomatoes, quartered
2 ½ cups of vegetable stock (more or less if you prefer a different consistency)
salt and pepper to taste
2 tbsp lemon juice

Toss together in a bowl the oil, spices and vegetables; mix well
