Spicy Watermelon Remoulade

Sweet watermelon, cool dill pickles and spicy jalapeño peppers in a mayo based sauce work well on any fish, seafood or chicken dish.

1/2 cup diced seedless watermelon
1/2 cup mayonaise

1/2 cup diced dill pickle

1 teaspoon finely diced jalapeno pepper (more or less, depending on how much of a kick you want)

1 tablespoon finely diced red onion

1/4 teaspoon cumin

1teaspoon smoked paprika

1/2 teaspoon ground ancho chili pepper
Combine all ingredients into small bowl. Refrigerate for at least one hour. Serve with fish, seafood or chicken.
