Spinach and Feta Pasta Recipe

This is an easy recipe that is perfect for those days when you don't have a lot of time to prepare dinner. Most of the ingredients you even have on hand! This is a healthy dinner recipe you will want to be sure to keep in your rotation!

8 ounces (1/2 a box) Penne pasta
1 Tablespoon olive oil
1 (28 ounce) can diced tomatoes
3 cups fresh baby spinach
1 onion, finely chopped
5 cloves minced garlic
1 cup sliced fresh mushrooms
4 ounces feta cheese, crumbled
Salt and pepper, to taste
Cook pasta according to package directions. While pasta is cooking, heat olive oil in a skillet over medium heat. Add onion, garlic and mushrooms and cook until tender. Add spinach and cook until wilted....
