Spinach Dip

1-12 ounce 1% cottage cheese
1-10 ounce package chopped spinach, thawed, drained
1 cup light mayonnaise
1.4 ounce Knorr brand dry vegetable soup mix
2 teaspoons grated fresh onion
1 teaspoon lemon juice
1-8 ounce can water chestnuts, drained, chopped
Place cottage cheese in a food processor; blend until smooth. Put cottage cheese in a bowl; set aside. Squeeze thawed spinach between paper towels to drain. Add spinach, mayonnaise, dry vegetable soup mix, onion, lemon juice and water chestnuts to cottage cheese. Stir until all ingredients are mixed. Cover and chill for a least 3 hours. Serve with non-fat or low-fat crackers and fresh raw vegetables.
