Spinach with Tomatoes

1 small red onion, finely chopped
5 mini bell peppers (yellow & orange)
4 garlic cloves minced
6 tablespoons butter
1/3 cup ketchup
1/2 cup carrots, grated
1 tablespoon dried basil
2 roma tomatoes, diced
1- 14.5 oz can diced tomatoes with fennel & red pepper
7 oz of frozen spinach, thawed & squeezed dry
to taste salt & pepper
Saute onions, bell peppers and garlic in the butter until tender in medium skillet. Add ketchup, carrots, dried basil, chopped roma and diced canned tomatoes. Cook for 10 -12 minutes more. Add the spinach, season with salt and pepper. Continue cooking till warmed.
