Spinich Quiche

I could never remember what Quiche was called when I was a little girl, so I called it Egg Pie. I've always loved quiche. This is a great way to get in those extra greens that we all need.

1 Single pie crust - from scratch or refrigerated
6 slices of diced ham or bacon
8 eggs
1/2 cup sour cream
1/2 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon onion powder
3 cups chopped fresh spinach
1 1/2 cheese (I used mild cheddar)
Bake pie crust following directions on recipe or package. While crust is baking combine eggs, sour cream, milk salt pepper, and onion powder. Then add ham, cheese and spinach. Pour mixture into your hot pie...
