This Spring Arugula Salad with Homemade Balsamic Dressing with fresh and delicious.

Salad:
1.5 cups of arugula
4 oz of sliced strawberries (about 3-4 strawberries)
1 oz of goat cheese
1/8 cup chopped pistachios
1/4 cup chopped red onion
Optional: 1/2 lb sliced chicken breast
Dressing:
2 tbsp olive oil
1 tbsp balsamic
1/4 tsp dijon mustard
1/4 tsp honey
Salt and pepper
