Got a man around for breakfast? This is the best thing to whip up...he will be eating out of your hand. Make sure to season the steak well and it should ideally be cooked to medium rare.

½ pound beef tenderloin steak (or any good quality steak)
1 cup mushrooms (sliced)
1 small shallot
2 cloves garlic (minced)
1oz brandy
2 english muffins
2 large eggs
4 egg yolk (room temperature)
1 oz warm water
Juice of 1/2 lemon
3 1/2 sticks of whole butter
¼ cup parsley puree mustard
1 tbsp mustard
salt and pepper
