Strawberry-Rhubarb Pie

This fruit pie is made with an all-butter crust and fresh, simple ingredients that allow the the natural, bright strawberry flavor to shine.

For the Pastry:
2¼ cups all-purpose flour
1 tsp salt
2 tbs granulated sugar
18 tbs unsalted butter, cold, cut into ¼-inch cubes
? cup ice water
For the filling:
3 cups fresh strawberries, hulled and sliced
3 cups fresh rhubarb, cut into 1-inch pieces
¾ cup granulated sugar
2 tsp lemon juice
¼ tsp vanilla extract
3-4 tbs quick-cooking tapioca
2 tbs unsalted butter, cut into small pieces
1 large egg (for egg wash)
