Stuffed Karela(Bitter gourd)

This recipe reduces the bitterness of bitter gourd

Bitter melon or bitter squash or bitter gourd or Karela or Goya or balsam pear- 3 nos
Potato-1 medium sized
Salt- 1 tsp(half tsp for boiling bitter gourd, half tsp for stuffing)
Turmeric powder-1 tsp(half tsp for boiling bitter gourd, half tsp for stuffing)
Cumin seeds-Half tsp
Paprika powder-Half tsp
Oil- 2 tsp
Dry mango powder(Amchur powder)-Half tsp
Cilantro leaves-2/3 stems
1. Cut the edges of bitter gourd , make it half and let it boil in pressure cooker with half tsp of salt and turmeric powder for 15 minutes. 2. Boil the potato along with bitter gourd or separately for 15 minutes till tender and cooked. 3.Remove the seeds from the boiled bitter gourd. 4.In a small pan, add oil and cumin seeds.Add potato,salt,turmeric powder, paprika powder, dry mango powder,cilantro leaves and smash the boiled potato and cook it till the spices are blended well. 5. Stuff the spicy smashed potato into the bitter gourd. 6.In a pan add oil and shallow fry the stuffed bitter gourd till the outer layer of bitter gourd is slightly brown in color. Its ready to served with rice or as a snack.
