I stuff the mushrooms with the cheese and herb mixture and then cook them in a covered skillet with olive oil for 10-12 minutes on medium-low heat. Just enough time to soften the mushrooms and melt the cheese. I like to serve these with a chicken or steak dinner. They really complete the meal and also help you serve smaller portions of meat because the mushrooms are so delicious and filling.
