Deliciously moist and fluffy vanilla cupcakes stuffed with summer berries, and topped with a sweet buttercream frosting!

For the Cupcakes
1 and 1/2 cups cake flour* 150g
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 large eggs room temperature
3/4 cup caster/granulated sugar 150g
2 teaspoons vanilla extract
1/2 cup unsalted butter 115g, melted
1/2 cup Greek style yogurt 120ml
1/4 cup fresh strawberries 50g, chopped
1/4 cup fresh raspberries 30g, chopped
1/4 cup fresh blueberries 25g, chopped
For the Frosting
4 cups icing sugar 500g
1 cup unsalted butter 226g, softened
2 - 3 tablespoons milk
1 teaspoon vanilla extract

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
