Summer Spinach Salad with Raspberry Vinaigrette

This recipe is so easy and very delicious– I just love the freshness of it. It is definitely worth it to make your own dressing! Feel free to add or substitute strawberries and/or mandarin oranges.

6-8 cups fresh spinach
raspberries (to taste)
blueberries (to taste)
½ c. chopped almonds
blue or feta cheese
Raspberry Vinaigrette:
1 pint fresh or frozen raspberries
2 T. lemon juice
2 T. red wine vinegar
4 tsp. dijon mustard
2 T. sugar
2/3 c. olive oil
Toss together salad ingredients, serve with raspberry vinaigrette.
