Super Simple Artichoke Bean Dip

2

This is a good quick-and-easy dip that is easy to throw together at the last minute if you have drop-in guests or just a craving. It's made with ingredients that are easy to keep in your pantry all the time. The coriander adds a nice lemony contrast to the creamy texture.

12
1 15-oz can white beans, drained and rinsed
1/2 14-oz can quartered artichoke hearts, drained (reserve the other half of the can for another recipe)
1 tsp extra virgin olive oil
1/2 tsp fresh ground pepper
1 tsp salt
1 tsp ground coriander
Combine the beans and artichoke hearts in a food processor and blend for 30-45 seconds. Add the remaining ingredients and blend for another 30-45 seconds. Transfer dip to a serving dish. Serve immediately...

Who doesn't love having a good Caesar salad! However, having Caesar salad in restaurants is never a healthy choice. As, it is always loaded with excess fats and calories. I have prepared an entirely healthy homemade Caesar salad in a tortilla bowl that rivals that of any restaurant.

Toss with the crisp lettuce, drizzle with the guilt-free flavorful dressing and finally top with croutons and cheese for the perfect main course!
