Sweet Chili Slaw

This is sweet and spicy with great crunch. A perfect side dish that take 5 minutes to prepare!

1/2 red pepper, sliced thinly
1/2 package broccoli slaw
1/4 cucumber, sliced
1 green onion, sliced
cilantro to taste, torn
basil to taste, torn
peanuts to taste, toasted and chopped
1/4 cup sweet chili dressing (below)

1/2 cup sweet chili sauce
1/4 cup coconut milk
2 tablespoons soy sauce
2 tablespoons lime juice
1 tablespoon peanut butter
2 cloves garlic, pressed
2 teaspoons ginger, grated
For Dressing: Simmer everything in a sauce pan over medium heat until the peanut butter has melted in and let cool. For Slaw: Toss it all together and drizzle with dressing.
