Sweet Hawaiian chicken

5 boneless ,skinless chicken breasts
1 green pepper
2 eggs
3/4 cup cornstarch
10 ,oz can pineapple chunks
1/2 cup brown sugar
1/4 cup soy sauce
1 tbsp sesame oil
1/2 tsp grated ginger
1 cup canola oil
Pre heat oven,400 deg. Slice chicken into bit size cubes. In a ziplock bag add 2 eggs beaten,place chicken inside. In another ziplock bag add cornstarch,take chicken out of eggs and put into cornstarch ,shake to coat. In a deep pan,heat canola oil on med/high.Using tongs take chicken out of cornstarch and cook in oil ( in small batches) til slightly golden.Drain on rack. In a glass bowl add soy sauce ,sugar,ginger,pineapple and sesame oil.Microwave for 3 min.Stir well. Cut pepper into cubes. In a glass 10 x 12 baking dish place chicken,peppers and sauce.Stir well to coat.put in oven for 15 min stir.Back into the oven for another 15.The sauce should be sticky,and chicken caramel brown. Serve with jasmine rice.
