This Sweet Potato Cobbler is full of cinnamon, nutmeg and cloves flavors and topped with a dollop of vanilla ice cream.
2 lb (900g) sweet potatoes
4 cups water
½ cup granulated sugar

6 tablespoons butter, melted
½ cup buttermilk
½ teaspoon vanilla extract
1 tablespoon brown sugar, for sprinkling
