I needed a side dish for my {sun chip chicken tenders} and I created this hash. Creamy, tender sweet potatoes cooked in juice and tossed with caramelized onions and garlic make this sweet potato hash worth going back for more!
6 medium sized sweet potatoes
2 Tablespoons olive oil
1 Tablespoon butter
2 cloves garlic-chopped
1 onion-chopped
2 cups juice-any kind
1 teaspoon fresh ground pepper
1 teaspoon salt
Cinnamon-to sprinkle on top

Peel and cube sweet potatoes.
In a microwave safe bowl add the sweet potatoes and juice. Microwave until potatoes are tender.
In a saute pan place the oil, onion, garlic and place on medium heat.
